Mixed Nut Brittle

This tasty treat gets crunchier, sweeter and nuttier with Fisher® Mixed Nuts in the mix.

Ingredients

  • 1 ½ cups granulated sugar
  • 1 cup corn syrup
  • ⅓ cup water
  • 2 teaspoons plus 2 tablespoons butter, divided
  • 4 cups Fisher® Mixed Nuts with Peanuts
  • 1 teaspoon vanilla
  • ½ teaspoon salt

Directions

  1. Heat sugar, corn syrup and water over medium heat, covered, to a boil. Uncover and cool until candy thermometer reaches 290°F.
  2. Meanwhile grease 15 × 10 baking pan (jelly roll pan) with 2 teaspoons butter and set aside.
  3. Warm mixed nuts in 2 baking pans in a 325°F oven for 10-15 minutes until warm (keep warm until ready to use).
  4. Remove sugar mixture from heat and carefully add nuts, vanilla, salt and remaining butter. Quickly spread into prepared pan. Cool completely and then break into brittle.
