Parmesan Roasted Cauliflower with Pine Nuts

Try this fresh twist on Cauliflower with Fisher® Pine Nuts. The aromas of roasted cauliflower, cheesy Parmesan and toasted pine nuts will leave mouths watering and stomachs grumbling.

  • 1 head cauliflower, about 1¾ lb.
  • 1 sliced medium onion
  • 2 Tbsp. olive oil
  • ¼ tsp. salt
  • 1/8 tsp. black pepper
  • 1/2 cup shredded Parmesan
  • ¼ cup Fisher® Chef’s Naturals Pine Nuts


  1. Preheat oven to 425°F.
  2. Cut 1 head cauliflower into florets; combine with onion and olive oil on a large rimmed baking sheet, season with salt and pepper. Roast, tossing occasionally 15 to 20 minutes or until almost tender. Sprinkle with Parmesan cheese and pine nuts, stir to combine, and roast until cauliflower is tender, 5-10 minutes longer. Serve immediately.
