Salmon With Mint Macadamia Pesto

  • 1½ cups packed fresh mint
  • ½ cup packed fresh basil
  • ¼ cup Fisher® Macadamia Halves and Pieces
  • 1 clove garlic
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon sugar
  • ¼ cup plus 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon salt, divided
  • 1½ lb. boneless, skinless salmon filet, cut into 6 oz. portions


  1. Blend mint, basil, macadamia nuts, garlic, lemon juice and sugar in a food processor until chopped. With motor running, slowly pour in olive oil; nuts will be finely chopped. Stir in ⅛ teaspoon salt; set aside.
  2. Season salmon with remaining ⅛ teaspoon salt. Heat 1 tablespoon oil into a non-stick skillet over medium-high heat. Place salmon filet skin-side down into pan. Cook for 4 minutes, turn, and cook for another 4 minutes. Cover; remove from heat and let sit for 5 minutes.
  3. Place salmon on a serving platter, top with pesto.
