Cranberry Orange Muffins

Rise and shine! Cranberries and orange zest add a tangy sweetness to this muffin mix. And when you mix in Fisher® Walnuts, you’ve got the perfect thing to wake up to in the morning- hearty with a great citrus flavor.

Ingredients

  • 1 cup sugar
  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 ½ tsp. double-acting baking powder
  • ½ tsp. salt
  • ½ tsp. baking soda
  • 1 tsp. freshly grated orange zest
  • ¾ cup fresh orange juice
  • ¾ cup coarsely chopped cranberries
  • ½ cup coarsely chopped Fisher® Chef’s Naturals Walnuts

Directions:

  1. Preheat oven to 350°F. Spray the insides of muffin pan with non-stick cooking spray or line with paper muffin liners.
  2. Beat sugar and butter together on medium speed in an electric mixer. Add egg, beating until incorporated, scrape down sides of bowl. Add the flour mixture alternating the orange juice. Always start with the flour and end with the flour, scrape bowl. Stir in cranberries and walnuts.
  3. Bake for 25 minutes or until a toothpick inserted in the center of the muffins comes out clean. Let sit in pans 5 minutes then turn out to a rack and let cool.
