
Cherry Almond Loaves

Ingredients
- 1 cup dried cherries
- ¼ cup cherry or orange juice
- 1¾ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ cup (1 stick) salted butter, softened
- ¾ cup granulated sugar
- 2 eggs
- ½ cup sour cream
- ½ teaspoon almond extract
- ¾ cup Fisher® Chef’s Naturals Slivered Almonds
- ½ cup sweetened flaked coconut
Directions
- Preheat oven to 350°F. Spray four mini loaf pans with no-stick cooking spray; set aside.
- In small bowl, place cherries and juice together.
- In medium bowl combine flour, baking powder and baking soda; mix well.
- In a large bowl, use electric mixer to cream butter and sugar. Add eggs, sour cream and almond extract. Gradually add flour mixture to butter; mix well.
- Thoroughly drain juice from cherries. Fold in drained cherries and almonds.
- Spread batter equally in prepared pans; sprinkle with coconut.
- Bake 28 to 32 minutes or until toothpick inserted in center is clean when removed. Remove to cooling rack; cool completely.
