Ingredients
- Peanut Sauce:
- ½ cup Fisher® Creamy Peanut Butter
- 1 tablespoon hot chili sauce
- ¾ cup canned coconut milk
- 2 tablespoons chopped cilantro
- ¼ teaspoon salt
- Pizzas:
- 8 mini pita breads
- 1 cup shredded cooked chicken
- ¼ cup chopped green onions
- 1 cup fresh bean sprouts
- 1 cup shredded mozzarella cheese
- ½ cup chopped Fisher® Chef’s Naturals Raw Peanuts
Directions
- Peanut Sauce: Combine peanut butter, hot chili sauce, and coconut milk in a small saucepan. Simmer together until slightly thick for about 10 minutes. Stir in the cilantro and salt. Set aside.
- Pizzas: Preheat an oven to 450°F. Place the pita bread on a flat sheet pan. Divide the peanut sauce on each pita, followed by the chicken, scallions, bean sprouts, cheese and peanuts.
- Place in the hot oven and let bake for 5 minutes until the cheese melts. Remove and serve immediately.
