Thai Chicken Mini Pizzas

Fisher® Peanuts, peanut butter, plus everything you love about Thai food – all in this delicious, bite-sized chicken pizza.

Yield: 4 servings

  • Peanut Sauce:
  • ½ cup Fisher® Creamy Peanut Butter
  • 1 tablespoon hot chili sauce
  • ¾ cup canned coconut milk
  • 2 tablespoons chopped cilantro
  • ¼ teaspoon salt
  • Pizzas:
  • 8 mini pita breads
  • 1 cup shredded cooked chicken
  • ¼ cup chopped green onions
  • 1 cup fresh bean sprouts
  • 1 cup shredded mozzarella cheese
  • ½ cup chopped Fisher® Chef’s Naturals Raw Peanuts


  1. Peanut Sauce: Combine peanut butter, hot chili sauce, and coconut milk in a small saucepan. Simmer together until slightly thick for about 10 minutes. Stir in the cilantro and salt. Set aside.
  2. Pizzas: Preheat an oven to 450°F. Place the pita bread on a flat sheet pan. Divide the peanut sauce on each pita, followed by the chicken, scallions, bean sprouts, cheese and peanuts.
  3. Place in the hot oven and let bake for 5 minutes until the cheese melts. Remove and serve immediately.
