Thai Chicken Mini Pizzas

Fisher® Peanuts, peanut butter, plus everything you love about Thai food – all in this delicious, bite-sized chicken pizza.

Ingredients

  • 1 cup cooked chicken, shredded
  • 1 bunch scallions, chopped
  • 1 cup fresh bean sprouts
  • 1 cup shredded mozzarella cheese
  • 8 mini pita breads
  • ½ cup Fisher® Chef’s Naturals Raw Peanuts, chopped
  • Peanut Sauce:
  • ½ cup Fisher® Creamy Peanut Butter
  • ¾ cup canned coconut milk
  • 2 tablespoons cilantro
  • Salt to taste
  • 1 tablespoon hot chili sauce (to taste)

Directions

  1. In a saucepan, combine the peanut butter, hot chili sauce, and coconut milk. Simmer together until slightly thick for about 10 minutes. Stir in the cilantro and salt. Set aside.
  2. Preheat an oven to 450°F.
  3. Place the pita bread on a flat sheet pan. Divide the peanut sauce on each pita, followed by the chicken, scallions, bean sprouts, and then the cheese.
  4. Place in the hot oven and let bake for 5 minutes until the cheese melts. Remove and sprinkle the chopped peanuts on top.
