
Thai Chicken Mini Pizzas

Ingredients
- 1 cup cooked chicken, shredded
- 1 bunch scallions, chopped
- 1 cup fresh bean sprouts
- 1 cup shredded mozzarella cheese
- 8 mini pita breads
- ½ cup Fisher® Chef’s Naturals Raw Peanuts, chopped
- Peanut Sauce:
- ½ cup Fisher® Creamy Peanut Butter
- ¾ cup canned coconut milk
- 2 tablespoons cilantro
- Salt to taste
- 1 tablespoon hot chili sauce (to taste)
Directions
- In a saucepan, combine the peanut butter, hot chili sauce, and coconut milk. Simmer together until slightly thick for about 10 minutes. Stir in the cilantro and salt. Set aside.
- Preheat an oven to 450°F.
- Place the pita bread on a flat sheet pan. Divide the peanut sauce on each pita, followed by the chicken, scallions, bean sprouts, and then the cheese.
- Place in the hot oven and let bake for 5 minutes until the cheese melts. Remove and sprinkle the chopped peanuts on top.
