Roasted Brussels Sprouts with Bacon and Walnuts

This dish will eliminate any previous aversion to Brussels sprouts. Replace the standard olive oil with reserved bacon fat, and roast the sprouts to perfection alongside Fisher® Walnuts and Pieces.

Cook Time: 20 minutes
Yield: 6 servings


  • 3 slices bacon
  • 1 lb. Brussels sprouts
  • Dash freshly ground black pepper
  • ¼ cup Fisher® Chef's Naturals Walnut Halves and Pieces


  1. Preheat oven to 375°F.
  2. Cook bacon in a skillet over medium-high heat until crispy. Remove bacon to a paper towel lined plate; reserve bacon fat. Crumble bacon; set aside.
  3. Cut off the ends of the brussels sprouts and pull off any outer leaves. Cut sprouts in half lengthwise. Mix them in a bowl with pepper and 2 Tbsp. of the reserved bacon fat. Place sprouts on a baking sheet and roast for 15 minutes stirring occasionally until nearly tender. Add walnuts to the pan and cook for an additional 5 to 10 minutes or until sprouts are fully cooked. Sprinkle with crumbled bacon and serve immediately.
